The latest Office Suite updates completely changed the theme colors and users aren't happy about it
However, in Word, and PowerPoint users can revert back to the standard theme.

Microsoft updated the color layout of its Office products with the 2023 version of Suite, and it left some color palettes such as yellow behind, with the themes of the Office Suite being particularly impacted by these changes.
The changes were many and wide across the all-encompassing platform: not only did the themes suffer from them, but the default font changed as well.
The old Calibri was replaced with the new Aptos, the table styles in Excel were replaced with new versions, and many users, rightfully so, felt overwhelmed by them.

Latest update of MS Office changed the colour layout, and there is no way to make the old version the default for new documents.

There is good news and bad news about these changes: the good news is that you can revert the theme to its standard version, but the bad news is that the reverse is only supported by a few apps, such as Word, and PowerPoint. You can sort of revert to the standard version in Excel, as well, but it’s more complicated.
How to revert the Office 365 theme colors to their classic version
In PowerPoint, accessing the Design tab will take you to choose a theme for your presentation. Pick the Office 2013-2022 theme, right-click on it, and select Set as Default Theme.
So: Design > Office 2013-2022 theme > Right-click > Set as Default Theme.
In Word, the process is quite similar. There is also a panel called Design, and you can choose various themes for your Word platform. Pick the Office 2013-2022 theme, click on the ribbon attached to it, and select Set as Default Theme.

Microsoft is releasing Office 2024 this year, but we don’t know if the Redmond-based tech giant wants to deprecate the default themes for the Office apps. Most likely, they will be available to users, for now.
